We’re embracing all things cozy and delicious this season, and let us tell you—nothing beats these soft (and not cakey!) pumpkin cookies. 🍂


Pumpkin Chocolate Chip Oatmeal Cookies

Here’s what you’ll need:

1 c. butter  

1 c. brown sugar  

1/2 c. sugar  

1 tbsp. vanilla  

1 egg yolk  

2/3 c. pumpkin puree  

2 c. flour  

1 1/2 c. oats  

1 tsp. baking soda  

1/2 tsp. salt  

1 tsp. cinnamon  

1 1/2 tsp. pumpkin pie spice  

1 3/4 c. chocolate chips  


Instructions:

🤍 Melt butter over medium-low heat in a saucepan, watching for small bubbles (don’t brown it!).  

🤍 Remove from heat, stir in sugars, and mix until smooth and silky (about 2-3 minutes). Let cool for 5-10 minutes.  

🤍 Add vanilla and egg yolk, stirring well.  

🤍 Mix in pumpkin puree.  

🤍 Add flour, oats, baking soda, salt, cinnamon, and pumpkin pie spice. Stir until fully combined.  

🤍 Chill dough for 15 minutes. Preheat oven to 350°F.  

🤍 Fold in chocolate chips (try adding salted caramel chips for a twist!).  

🤍 Scoop dough onto baking sheets, spacing evenly.  

🤍 Bake 10-13 minutes or until edges are lightly golden. Cool for 5-10 minutes, then enjoy!
